Roasted Garlic Soup

Everyone raves about this soup, it sounds delicious!

Ingredients:
1 bulb of garlic (large), all cloves peeled
1 onion, diced
1 Tbs. olive oil
4 cups chicken or vegetable stock
1 cup cream
2 cups peeled and diced potatoes
salt and fresh ground pepper, to taste

~Preheat oven to 400 F. Coat garlic with oil and wrap in aluminum foil; roast in oven for 45 minutes. Remove and let cool.
Place the garlic, onion, stock, cream, and potatoes in a Dutch oven, cook over medium heat until potatoes are tender. Let cool slightly, place in a food processor and puree. Return to Dutch oven and simmer while seasoning with salt and pepper.

    Glad to have found your blog. We tried this garlic soup recipe (http://smittenkitchen.com/2006/08/a-44-clove-ticket-to-a-happier-place/) and were blown away. I don't know if I'll ever make potato-leek soup again. If you've got garlic to spare, totally worth the 44 cloves for it. Hope you guys and Luna are staying warm.
